Born and raised in Sibu, a city in Sarawak, located in the East of Malaysia. Calvin had spent a decade, learning and working in Australia.

My name is Calvin Chua, the founder of pen.cooks and ‘Aiya Cincai La! Dining’.

Having experiences in French and Japanese cuisines, one thing that has always intrigued, interest and not forgotten is Calvin’s roots, from childhood snacks to food Calvin growing up eating.

‘Aiya Cincai La! Dining’’ is a fun food project by Calvin, with experiences from diverse background, expect dishes crafts in a modern and creative edge, incorporating techniques Calvin honed throughout his career. The purpose of this project is to tailor the fun, unique and creativity to each menu to fit clients' desires and delivering a one-of-a-kind culinary experience - whether it is private dining, catering, pop-up or collabrations.

Fun facts:

‘Aiya’ - expression or exclamation of surprise, blame, dismay, shock, or fear.

Cincai la’ - a term used in Malaysia and Singapore that means "whatever", "casually", or "doing things as one pleases"
